Blueberry Coconut Chia Pudding

coconut milk

fresh blueberries, washed
you can substitute frozen
½
tsp.
vanilla extract
3
Medjool dates
pitted
½
tsp.
cardamom powder
small
piece
fresh ginger
peeled & grated
pinch
sea salt
½
c.
chia seeds
Instructions
In a high-speed blender, blend coconut milk, blueberries, vanilla, dates, cardamom, ginger and salt.
Combine with chia in a small bowl and mix.
Let sit 1–8 hours or until thickened.
