Mix all of the ingredients in a large mixing bowl and knead for about five minutes until the juices are released.
Stuff the mixture into a clean dry jar, pressing it down firmly as you go. Leave space at the top of the jar, and add water to submerge the ingredients. You can use a weight such as another jar to keep the ingredients pressed down.
Close the jar and let it sit unrefrigerated for 2–4 days until the contents taste good to you. Transfer to the refrigerator. It will be best after two weeks.
