  • large mixing bowl
  • larger glass jar


  • 1 large cabbage cored and shredded
  • 1 onion chopped fine
  • 2 Tbsp. fennel seeds
  • 2 Tbsp. coriander seeds
  • 2 Tbsp. fresh mint leaves or 1 Tbsp. dried mint
  • 2 Tbsp. hulled cardamom seeds or 1 tsp. cardamom powder
  • 2 Tbsp. salt
  • 1-2 c. cucumbers thinly sliced; optional
  • 1-2 c. cilantro chopped; optional
  • 1-2 c. fennel bulb thinly sliced; optional
  • 1-2 c. chard stems thinly sliced; optional


  • Mix all of the ingredients in a large mixing bowl and knead for about five minutes until the juices are released. 
  • Stuff the mixture into a clean dry jar, pressing it down firmly as you go. Leave space at the top of the jar, and add water to submerge the ingredients. You can use a weight such as another jar to keep the ingredients pressed down.
  • Close the jar and let it sit unrefrigerated for 2–4 days until the contents taste good to you. Transfer to the refrigerator. It will be best after two weeks.
