Blueberry Coconut Chia Pudding

Ingredients

  • 1 13.5-oz can coconut milk
  • 2–3 c. fresh blueberries, washed you can substitute frozen
  • ½ tsp. vanilla extract
  • 3 Medjool dates pitted
  • ½ tsp. cardamom powder
  • small piece fresh ginger peeled & grated
  • pinch sea salt
  • ½ c. chia seeds

Instructions

  • In a high-speed blender, blend coconut milk, blueberries, vanilla, dates, cardamom, ginger and salt.
  • Combine with chia in a small bowl and mix.
  • Let sit 1–8 hours or until thickened.
