Asparagus Soup with Thyme

Equipment

Ingredients

  • 1 Tbsp. sesame oil
  • 1 leek sliced
  • 1 handful shiitake mushrooms chopped
  • 1 bunch asparagus chopped
  • 2 Yukon gold potatoes peeled & chopped
  • 4 c. vegetable stock or water
  • 1 c. roasted & salted tahini
  • 1 handful spinach chopped
  • 1 Tbsp. fresh thyme chopped
  • salt to taste
  • black pepper to taste
  • 1 tsp. tarragon optional

Instructions

  • Sauté the leeks in sesame oil on medium high heat for about 5 minutes.
  • Add the shiitake mushrooms and continue to sauté for another 7–10 minutes.
  • Add the asparagus, potatoes, and vegetable stock.
  • Cook for 20 minutes or until the potatoes are soft.
  • Add the remaining ingredients and blend, if you like.
